Udon noodles with spicy chicken and peanuts
Quick and easy Asian stir-fry that packs a real punch.

Udon noodles with spicy chicken and peanuts
- 2 tablespoon peanut oil
- 2 clove garlic, chopped
- 600 gram chicken mince
- 1/4 cup sweet chilli sauce
- 2 tablespoon soy sauce
- 4 spring onions, thickly sliced
- 400 gram chopped fresh coriander
- 1 cup toasted peanuts, coarsely chopped

Heat a little oil in a nonstick frying pan. Add the garlic and fry for 30 seconds. Add the chicken mince and cook for 10 minutes to brown the mince, breaking up any lumps of mince with a wooden spoon.

Add the chilli sauce and soy sauce, then stir-fry for a few minutes. Add the spring onions and stir-fry for a few minutes more.

At the same time, cook the udon noodles in boiling water for three minutes or according to packet instructions. Drain well and divide between four serving bowls.

Top the noodles with some chicken mixture. Scatter with chopped fresh coriander and peanuts and serve immediately.
