Three grain fried rice
This fried rice recipe has had a health-injection with brown, red and wild rice, green beans and bok choy

ingredients
Three grain fried rice
- 1 tablespoon vegetable oil
- 1 cup diced swiss brown mushrooms
- 1 cup green beans, finely sliced lengthways
- 1/2 cup chopped bok choy
- 1 250g packet UNCLE BEN’s® Rice Medley
- 1/4 cup sliced spring onion
- 1 small red chilli, thinly sliced
Citrus miso dressing
- 1 tablespoon finely grated fresh ginger
- 2 tablespoon reduced salt soy sauce
- 3 tablespoon orange juice
- 1 tablespoon miso paste
- 1 tablespoon sesame seeds
- pinch salt

Heat oil in a large non-stick frying pan or wok over a medium-high heat.

Add mushrooms and sauté for 2 minutes. Add beans, bok choy and rice.

Pour over citrus miso dressing and cook for a further 3-4 minutes, stirring frequently.

Divide between 2 bowls, top with chilli and spring onion, and serve immediately.

Combine all ingredients in a small bowl or jar and whisk until miso is fully incorporated.
