Super-easy Balinese chicken satay skewers
Full of flavour, healthy and super-easy to make, Nici Wickes' chicken satay recipe sees spiced minced chicken shaped around a wide bamboo stick. These are incredibly delicious and fun to make!

ingredients
- 16 wide flat bamboo skewers, soaked in water for 1 hour
- 1 onion
- thumb-sized piece fresh ginger, grated
- 2-3 chillies, de-seeded
- 1 tablespoon turmeric
- 1 tablespoon palm sugar, grated
- 1 teaspoon peanut or sesame oil
- 1 teaspoon salt
- 400 gram chicken mince
- 100 gram thin rice noodles, soaked in boiling water and drained well
- 1/2 cucumber, thinly sliced, to serve
- 3 radishes, sliced, to serve
- 1/2 cup roasted peanuts, to serve
- store-bought peanut sauce

Using a food processor or mortar and pestle, make a paste with the onion, ginger, chilli, turmeric, sugar, oil and salt. In a bowl, work the paste into the chicken mince until well combined.

Take a small, egg-sized amount of the mixture and wrap it around one-third of the bamboo stick, pressing the mixture firmly onto the stick. It can be tricky at first but you’ll get the knack of it after a few. Continue until all the mixture has been used.

Cook the satay in a pan, on a barbecue or under a hot grill, turning to cook all over.

Serve with rice noodles, chopped cucumber and radish, peanuts and peanut sauce.
