ingredients
Summer bean and tomato salad
- 200 gram green beans, trimmed
- 200 gram snow peas, trimmed
- 1 tablespoon olive oil
- 3 shallots, sliced
- 2 garlic cloves, crushed
- 250 gram punnet cherry tomatoes, halved
- 1/4 cup parsley leaves
- 1/4 cup toasted flaked almonds
- snow pea sprouts to serve
Dresssing
- 1/4 cup extra virgin olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon lemon juice
- 1/2 teaspoon Dijon mustard

Summer bean and tomato salad

Place beans and snow peas in a heat-proof bowl. Cover with boiling water. Set aside for 2 minutes until bright green and tender crisp. Drain and refresh under cold running water.

In a large frying pan, heat oil on high. Sauté shallot and garlic for 1 minute until aromatic.

For the dressing: In a jug, whisk all ingredients together. Season.

Combine beans, peas, shallot mixture, tomato and parsley. Add dressing. Sprinkle with almonds and sprouts.
notes
- Toast almonds in a dry frying pan over medium heat, tossing often until lightly golden.
