Spiced barbecue pork with pineapple
Marinated pork fillet is lightly char-grilled and served with charred pineapple, jasmine rice and fresh coriander for this deliciously tasty dish

Pineapple spiced barbecue pork
- 500 gram pork fillet, trimmed
- 1 cup pineapple juice
- 2 tablespoon brown sugar
- 2 tablespoon soy sauce
- 1 tablespoon tomato sauce
- 1 tablespoon vegetable oil
- 2 teaspoon five-spice powder
- 1 teaspoon chilli flakes, optional
- 1 small pineapple, peeled, thinly sliced
To serve
- jasmine rice, steamed
- coriander leaves

Pineapple spiced barbecue pork

Place pork in a glass bowl. In a jug, whisk juice, sugar, sauces, oil and spices together. Pour half the marinade over pork and coat well.

Pour remaining marinade into a small saucepan. Simmer for 3-4 minutes, stirring often, to thicken slightly.

Preheat a char-grill pan or grill on high. Brush with oil. Cook pork for 10-12 minutes, turning, until just cooked through. Rest pork, loosely covered with foil, for 5 minutes.

Grill pineapple for 2-3 minutes each side until light marks appear.

Thinly slice rested pork. Serve on a bed of rice with pineapple. Spoon sauce over and scatter with coriander.

✦ For a nice crunch, sprinkle with toasted chopped peanuts.
