Shredded chicken, rocket and walnut salad with blue cheese dressing
This delicious salad recipe combines chicken, rocket, walnut and pears with a creamy, homemade blue cheese dressing. Serve as a tasty side dish with plenty of crusty bread

ingredients
- 130 gram packet wild rocket
- 200 gram shredded chicken
- 2 firm pears, cut into eighths
- 1/2 cup walnuts
Blue cheese dressing
- 50 gram blue cheese
- 50 gram crème fraiche
- 1/4 cup olive oil
- 1/4 cup cider vinegar
- 1/4 cup water
- 2 tablespoon chopped chives
- freshly ground black pepper

To prepare the dressing, place all the ingredients except the chives in a blender or food processor and blend until smooth. Stir in the chives and season with freshly ground black pepper. Set aside.

Place the rocket on a serving platter. Top with the shredded chicken, pears and walnuts. Drizzle over the dressing and serve immediately.
notes
- You can buy cooked shredded chicken from the deli section of your supermarket.
