Shanghai bok choy with basil
This quick recipe for Shanghai bok choy with basil is a great side dish that works well with a piece of fresh fish or grilled marinated meat. The quantity serves two but can be doubled or tripled

ingredients
- 1/2 tablespoon sesame oil
- 1 large garlic clove, minced
- 1 stalk lemongrass, thinly sliced and chopped finely
- 1/2 red capsicum, cut into thin strips
- 2 medium Shanghai bok choy, sliced
- 2 tablespoon soy sauce or tamari
- a pinch of dried chilli flakes
- 3 spring onions, sliced
- 1/2 teaspoon honey
- 4 tablespoon chopped fresh basil

Heat the oil in a large pan and add the garlic, lemongrass, capsicum and the white parts of the bok choy.

Add the soy sauce or tamari and stir-fry for 2-3 minutes, or until the vegetables are tender.

Mix in the bok choy greens, chilli flakes, sliced spring onion and honey and cook until tender.

Serve sprinkled with fresh basil.
