Quinoa with brown rice, chicken tenderloins, feta and lemon dressing

ingredients
- 400 gram packet frozen Birds Eye SteamFresh Plus Quinoa with Brown Rice
- 1/4 cup olive oil
- 1 1/2 tablespoon lemon juice
- finely grated zest of 1 small lemon
- 2 teaspoon chopped fresh oregano
- 2 teaspoon chopped fresh mint
- 300 gram chicken tenderloins
- 80 gram marinated goat feta
- fresh mint leaves, extra, for garnish

Cook frozen Birds Eye Quinoa with Brown Rice following packet directions.

Combine oil, lemon juice, lemon zest, oregano and mint to make a dressing. Drizzle over Birds Eye Quinoa with Brown Rice, tossing gently.

Panfry or BBQ chicken 3-4 minutes on each side or until golden and cooked through.

Serve Birds Eye Quinoa with Brown Rice topped with cooked chicken and sprinkle with crumbled feta and extra mint leaves. Serve immediately.
