Quinoa, ham and feta salad with sun-dried tomato dressing
This tasty quinoa, ham and feta salad is exceptional accompanied with a tasty homemade sun-dried tomato dressing and enjoyed for a filing lunch

ingredients
- 1 cup quinoa
- 1 small red onion, very finely chopped
- 1/2 cup chopped parsley
- 1 yellow capsicum, cut into chunks
- 100 gram ham pieces, cut into chunks
- 100 gram feta, crumbled
Dressing
- 1/4 cup sun-dried tomato pesto
- 2 tablespoon olive oil
- 1/4 cup lemon juice
- 1 teaspoon honey
- 1 clove garlic, crushed

To prepare the dressing, combine all the ingredients and set aside.

Cook the quinoa according to the directions on the packet. Set aside to cool.

Place the quinoa, onion, parsley, capsicum and ham in a salad bowl. Pour the dressing over and toss gently. Sprinkle the feta on top before serving
