Quick carbonara
Quick, easy and delicious, this creamy carbonara pasta with pancetta is the ultimate after-work dinner dish.

ingredients
Quick carbonara
- 500 gram fresh fettuccine
- 300 millilitre cream
- 3 eggs
- 1/2 cup grated parmesan
- 1 teaspoon dijon mustard
- 150 gram pancetta, thickly sliced
- 1/4 cup roughly chopped flat-leaf parsley, plus extra to serve
- salad, to serve (optional)
- crusty bread, to serve (optional)

Quick carbonara

In a large saucepan of boiling, salted water, cook pasta according to packet instructions.

Meanwhile, in a large bowl, whisk together the cream, eggs, parmesan and mustard. Season to taste.

Drain pasta and return to pan. Toss cream mixture, pancetta and parsley through hot pasta.

Serve topped with extra parsley and accompany with a salad and crusty bread.
notes
You can quickly saute the pancetta before adding it to the pasta. For lower-fat version, replace cream with little evaporated milk.
