Quick and easy French-style fresh fruit cake
Nici Wickes' mum shares her take on a French-style fruit cake, inspired by a recipe from French Wine Harvest by Rosi Hanson. It's quick, easy and only needs a handful of ingredients. It also happens to be dairy-free!

- 3 eggs
- 180 gram sugar
- 250 gram flour, sifted
- 3 teaspoon baking powder
- 1 tablespoon oil
- 500 gram fresh fruit – apples, plums, nectarines, apricots or peaches
- cream or crème fraîche, to serve (if not dairy-free)

Preheat oven to 200°C fan bake. Line a 20cm springform tin with baking paper.

In a mixer, beat the eggs and sugar until pale and creamy. Stir in the sifted flour and baking powder, then the oil.

Cut the fruit into bite-sized chunks. If using apples, peel them. Fold the fruit into the batter. Scrape into the tin and bake for 35-40 minutes or until a skewer comes out clean.

When cool, remove from the tin and serve either warm or cold with fresh cream or crème fraîche.
notes
- This cake rises quite a bit, so you can try bake it in a larger tin, say 22cm. - This cake just happens to be dairy-free too!
