Pickled courgettes and carrot

ingredients
- 2 courgettes, julienned
- 1 carrot, peeled and julienned
- 1/4 red onion, thinly sliced
- 2 tablespoon salt
- 1 1/2 cup cider vinegar
- 1/2 cup sugar
- 1 teaspoon turmeric
- 2 teaspoon mustard seeds

Mix the vegetables together with salt in a colander and let stand for 30 minutes. Pat dry.

Pack into sterilised jars.

Simmer the vinegar, sugar, turmeric and mustard seeds for 5 minutes until the sugar is dissolved. Cool.

Once the pickling liquid is cool, pour over the vegetables and seal the jars.
