ingredients
Coffee and walnut slice
- 300 gram vanilla wine biscuits, crumbled
- 1/2 cup sweetened condensed milk
- 50 gram butter, melted
- 1/2 cup walnuts, coarsely chopped
- 2 shots espresso coffee or 3 teaspoons instant coffee, dissolved in 2½ tablespoons hot water
- 1/2 cup chocolate chips
Coffee icing
- 2 cup icing sugar
- 1 teaspoon butter, softened
- 1 shot espresso coffee or 1½ teaspoons instant coffee dissolved in 4 teaspoons hot water
- extra hot water
- extra chopped walnuts and chocolate chips

Line a 20cm x 24cm slice pan with baking paper.

To make the base, combine the biscuit crumbs, condensed milk, butter, walnuts and coffee in a large bowl and mix together well. Add the chocolate chips then press the mixture into the pan. Refrigerate the base for 1 hour.

To make the icing, combine the icing sugar, butter and coffee and mix together well. Add sufficient hot water to make the mixture a spreadable consistency.

Spread the icing over the base and sprinkle over the extra walnuts and chocolate chips, gently pressing them into the icing. Chill the slice until it has set. Remove the slice from the pan and cut it into square pieces.
