Orange cake
This true orange-flavoured treat is easy to make. Cranberry and orange is a flavour match made in heaven.Photography by Todd Eyre.

ingredients
Orange cake
- 125 gram butter
- 1 cup sugar
- 1 teaspoon vanilla
- 2 eggs
- 1 teaspoon baking soda
- 3/4 cup warm water
- 1 orange
- 1 cup cranberries
- 1/2 cup walnut pieces
- 1 1/4 cup gluten-free flour
- 1/2 cup ground almonds
Sugar syrup
- 1/4 cup sugar
- 2 tablespoon water
- lengths of orange peel, zested

Preheat oven to 180°C. Grease and line a 22-24cm round cake tin.

Cream the butter, sugar and vanilla until fluffy. Add the eggs, one at a time, and beat between each addition.

Dissolve the soda in water. Add to the creamed mixture.

Mince the orange (peel and all) with the cranberries, then add the walnuts. Stir into the creamed mixture.

Sift in the flour, then add the almonds and mix well.

Scrape the batter into the tin and bake for 50-60 minutes or until a skewer inserted into the cake comes out clean. Remove from the oven. Cool for 10 minutes and turn out.
Sugar syrup

For the sugar syrup, simmer all the ingredients in a pan until it becomes syrupy. When the cake is cold, pour the syrup over and serve.
