No-cook ginger slice
Soothing for your digestive system and wonderfully warming, ginger is the perfect spice for winter. Try this raw ginger slice and I guarantee you’ll be hooked, as will your gluten, dairy and refined sugar intolerant friends!

ingredients
Ginger slice
- 2 cup nuts – i used a mix of brazil, unsalted cashews and almonds
- 1 cup pitted dates, soaked in boiling water for 15 minutes, then drained
- 2 tablespoon coconut oil, melted
- 1 teaspoon ground ginger
Icing
- 3/4 cup coconut oil, melted
- 1/2 cup honey
- 1/2 cup cashew butter
- 3 teaspoon ground ginger

Process the nuts, dates, coconut oil and ground ginger until well combined. The mixture should hold together when you pinch it between your fingers.

Press into a sandwich tin lined with baking paper. Place in the fridge to set.
Icing

To make the icing, blend the coconut oil, honey, cashew butter and ground ginger until smooth, then pour over the base and smooth out with a wet knife or spatula.

Put in the fridge or freezer to set, then slice up. Store in an airtight container in the fridge until ready to serve.
