Maple-glazed turkey steaks

ingredients
- 750 gram kumara, peeled, quartered
- 2 tablespoon olive oil
- 4 150g turkey steaks
- 1/4 cup maple syrup
- 2 tablespoon brown sugar
- 1.5 cup baby beetroot leaves
- 1/4 cup dried cranberries
- 1 tablespoon white wine vinegar

Preheat oven to hot, 200°C. Line an oven tray with foil.

Toss kumara in half the oil on tray and season. Roast for 25-30 minutes until tender.

In a bowl, combine turkey with maple syrup and sugar. Coat well and season.

In a frying pan, heat remaining oil on medium. Cook turkey for 2-3 minutes each side until cooked through.

Roughly chop kumara. Transfer to a salad bowl with beetroot leaves and cranberries. Toss gently to combine.

Serve turkey on a bed of salad, drizzled with any pan juices and vinegar.
notes
- To bulk out any leftover salad, add 1 cup cooked quinoa or couscous and dress with combined 1 tablespoon each of maple syrup, red wine vinegar, extra virgin olive oil and 1 teaspoon mustard.
