Lime and honey pavlovas
This lime and honey pavlova recipe is fantastic served for dessert with its sweet crunchy meringue crust and soft marshmallow-like centre. Top with clouds of whipped cream for a real treat

ingredients
- 3 egg whites
- 3/4 cup caster sugar
- 1/2 honeydew melon
- 1/2 cup icing sugar
- zest of 1 lime
- 1 tablespoon lime, juice
- whipped cream and melon, to serve

Beat egg whites to soft peaks. Gradually beat in caster sugar until dissolved and meringue is glossy.

Spoon 6 meringue nests onto a lined oven tray. Bake in a 140ºC oven for 30-35 minutes.

Cool in turned-off oven. Scoop balls from honeydew melon.

Mix with icing sugar, zest and lime juice. Top meringue with whipped cream and melon.
