Janet’s fruit bran loaf
Try this economical fruit loaf recipe that was given to Mum by her good friend Janet years ago. It is always a firm family favourite – on its own or slathered in butter.

Fruit bran loaf
- 1 cup bran flakes
- 1 cup brown sugar
- 1 cup chopped apricots or other dried fruit
- 1 tablespoon honey or golden syrup
- 1 cup milk
- 1 cup flour
- 1 teaspoon baking powder
- 1/2 cup walnuts, chopped (optional)

Fruit bran loaf

Grease a loaf tin and line the base with baking paper.

In a bowl, soak the bran, sugar, apricots and honey with the milk for 1 hour.

Preheat oven to 180°C. Mix in the flour, baking powder and nuts until just combined.

Pour into the loaf tin and bake for about 1 hour or until a skewer comes out clean.

Remove from the oven and leave in the tin for 10 minutes before turning out.

This loaf is so popular and easy to make that I usually double the recipe and make two loaves at a time. It’s a far more economical use of the oven. The loaf toasts well too!
