Faux-jito
If you’re a fan of mojito cocktails (who isn’t?), then you’re sure to enjoy this alcohol-free version. You may find you don’t miss the rum after all!

ingredients
Faux-jito
- 4 tablespoon grated palm sugar or 3 tbsp brown sugar
- 2 tablespoon water
- juice of 4 limes
- large handful fresh mint leaves
- 1 cup ice cubes
- 750 millilitre soda water
- mint leaves and lime slices, to serve

Make a sugar syrup by simmering the sugar and water together for 4-5 minutes until the sugar has dissolved. Set aside to cool.

Using a blender, mortar and pestle or food processor, combine the cooled sugar syrup with the lime juice, mint and half the ice.

Spoon into a serving jug. Add the soda water and stir. Taste and add more lime juice or sugar, depending on your preference.

To serve, add the remaining ice cubes, then garnish with mint and lime.
notes
Using palm or brown sugar as a sweetener gives a more caramel flavour than regular white sugar.
