Easy egg roll-ups

ingredients
- 6 eggs
- 1/2 cup cream
- 2 tablespoon chives
- 50 gram finely sliced smoked shaved ham
- 1 finely sliced spring onion
- oil
- fruit chutney, green salad to serve
method

Whisk eggs with cream, then add chives, smoked shaved ham and spring onion. Season well.

Heat a large frypan and lightly oil.

Add one soup ladle (¼ of the mixture) to the pan and swirl around to cover the base and even out the ingredients.

Cook over a low-medium heat for 2-3 minutes until set on top. Flip over and cook the other side until pale golden.

Transfer to a plate and roll up. Repeat with remaining mixture, oiling the pan in between.

Serve with your favourite fruit chutney, and a green salad.
