Date and lemon slice
A beautiful date slice topped with a silky lemon icing - the ideal date and lemon slice recipe

ingredients
- 1 cup self-raising flour
- 1 cup shredded coconut, plus extra ¼ cup to serve
- 1 cup chopped dates
- 1/2 cup caster sugar
- 1 teaspoon finely grated lemon zest
- 125 gram butter, melted
- 1 egg, lightly beaten
Lemon icing
- 3/4 cup icing sugar
- 2 tablespoon lemon juice
- 15 gram butter, melted
- zest of one lemon

Preheat oven to moderate, 180°C. Lightly grease an 18 x 28cm slice pan. Line base and sides with baking paper, extending sides 2cm above pan edge.

Sift flour into a large bowl. Stir through coconut, dates, sugar and zest. Blend in butter and egg, mixing well.

Spread mixture into prepared pan. Bake for 30-35 minutes until firm and golden. Cool in pan.

Lemon icing: Meanwhile, in a bowl, combine all ingredients, stirring until smooth. Spread over cooled slice. Sprinkle with extra coconut and lemon zest. Put aside to set. Serve cut into squares. Store in an airtight container.
