Dark chocolate rocky road
- 400 gram good-quality dark chocolate (at least 70% cocoa solids)
- 400 gram dark chocolate melts
- 2 cup marshmallows, halved
- 1 cup dried cranberries
- 1 cup freeze-dried strawberries
- 1 cup freeze-dried blueberries
- 1 cup shelled peanuts

Grease and line a 20cm x 30cm rectangular slice tray with baking paper.

Melt both chocolates in a heatproof bowl over a saucepan of simmering water, making sure the base of the bowl doesn’t touch the water.

When the chocolate is smooth and melted, remove from the heat and stir through the marshmallows and ¾ cup each of the cranberries, strawberries, blueberries and peanuts. Stir until well combined.

Pour the mixture onto the baking tray and scatter the remaining dried fruit and nuts over the top, pressing down lightly to ensure everything sticks together. Refrigerate for at least 1 hour before cutting with a hot, sharp knife into pieces.
