Chia chocolate puddings

Chia chocolate puddings
- 1 cup almond milk
- 1/3 cup chia seeds
- 1 tablespoon cacao powder
- 2 tablespoon raw honey
- plus extra to drizzle
- 1/2 cup blueberries, plus extra to serve
- 2 tablespoon pistachio kernels, chopped

Chia chocolate puddings

In a large jug, combine milk, seeds, cacao and honey. Mix well. Set aside 10 minutes, stirring occasionally to prevent clumping.

Stir blueberries through. Pour evenly among 4 serving glasses or bowls. Chill 30 minutes.

Serve topped with extra berries, nuts and a drizzle of honey.

Chia seeds swell to about 17 times their original size when mixed with liquid to form a soft gel. You can swap almond milk for coconut milk or water, or pureed fruit.
