Chewy citrus and almond squares
The chewy texture and hit of citrus in this slice makes it perfect for lunch boxes or to share with friends over a cuppa

ingredients
Chewy citrus and almond squares
- 150 gram butter, softened
- 150 gram (about 2/3 cup) sugar
- 1 egg, lightly beaten
- 200 gram (about 1½ cups) flour
Filling
- 115 gram ground almonds
- 1/2 cup brown sugar, loosely packed
- zest and juice of 1 orange, plus 1 lemon

Preheat oven to 150°C. Line a 23cm x 23cm tin with baking paper.

Cream the butter and sugar, then add ½ the egg and mix. Add the flour and combine.

Press half of the mixture firmly into the baking tin.

For the filling, mix all the ingredients together, then spread evenly over the base. Cover with the remaining mixture.

Glaze the top with the reserved beaten egg. Bake for 30 minutes or until the top is firm and golden.

Slice when cooled.

- Glazing the top with egg wash gives this slice a beautiful golden shine – like a cheat’s baklava.
