Cheat's orange honey syrup cake

  • 1/2 cup unsalted pistachios, roughly chopped
  • 1/2 cup honey
  • 2 oranges, juice
  • 1 prepared 20 cm round sponge cake
  • thick cinnamon yoghurt, to serve

    Place nuts in a medium frying pan on medium heat. Toast 1-2 minutes. tossing occasionally, until fragrant. Add honey and juice, stirring until smooth and syrupy.

    Meanwhile, cover cake in plastic wrap. Microwave on medium (50 per cent power) 1-2 minutes, until warm. Discard plastic and transfer cake to serving plate.

    Use a small knife to make small holes all over the surface of cake. Drizzle hot nut syrup over. Serve with dollops of yoghurt.
