Char siu pork salad with noodles and broccolini

ingredients
- 500 gram pork scotch fillets, thinly sliced
- 1/4 cup char siu (Chinese barbecue marinade)
- 1 tablespoon olive oil
- 2 bunch broccolini, roughly chopped
- 200 gram vermicelli noodles
- 1 carrot, peeled, julienned
- 1/2 cup coriander leaves, plus extra to serve
- 2 tablespoon chopped roasted peanuts
- sliced long red chilli to serve

In a large bowl, combine pork and char siu.

In a wok or large frying pan, heat oil on high. Stir-fry pork in two batches for 3-4 minutes each until cooked through. Transfer pork to a plate. Reserve cooking juices.

In a large heatproof bowl, combine broccolini and noodles. Pour over enough boiling water to cover. Set aside for 5 minutes until noodles are tender. Drain well. Return to bowl.

Add pork, carrot, coriander leaves and peanuts to broccolini mixture. Drizzle over pan juices. Serve sprinkled with extra coriander leaves and chilli.
