ingredients
- 500 gram plums, halved around the natural crease, stone removed
- 65 gram light muscovado sugar
- 1 orange, zested and juiced
- 1 vanilla bean
- 1/3 cup water
- 1/2 cup cream
- 1/2 cup mascarpone
- 1 to 3 tablespoons sugar, to taste
method
- 1
Preheat oven to 190°C. Place plums in an ovenproof dish with sugar, zest, juice, vanilla bean and water. Bake, uncovered, stirring occasionally, for 35-40 minutes or until the plums are tender.
- 2
Combine the cream and mascarpone. Remove vanilla bean from plum syrup and split it in half lengthways. Use a teaspoon to scrape the seeds from one half of the bean, then add them to the mascarpone. Mix, adding sugar until sweetened to your taste.
- 3
Serve the plums and syrup warm or cold, with a dollop of the vanilla mascarpone cream.
