Avocado and minted pea spread with falafel pita pockets
These scrumptious falafel pita pockets are fantastic served with avocado and minted pea spread and enjoyed for a satisfying lunch

ingredients
- 150 gram cream cheese, softened
- 1/2 cup minted green peas
- 1 firm ripe avocado
- 1 tablespoon lemon juice
- garlic salt and freshly ground black pepper to taste
- 1 1/2 cup falafel mix
- 3/4 cup cold water
- 1/2 cup plain oil (approx)
- 3 pita pockets
- mixed lettuce leaves, feta cheese, mint leaves and chopped red onion to serve

Blend together the cream cheese, peas, avocado and lemon juice in the bowl of a food processor or with a stick blender until nearly smooth. Season to taste.

Combine the falafel mix with the water and leave to stand for 10 minutes.

Shape the falafel mixture into small balls. Flatten them slightly.

Heat the oil in a pan over a medium heat and gently fry the balls for a few minutes each side until they are golden and set.

Cut the pita pockets in half and spread them generously with the avocado and pea mixture. Fill with lettuce, warm falafel, crumbled feta, mint leaves and red onion.
notes
- These pita pockets are also delicious filled with grilled chicken strips or barbecued beef strips instead of falafel.
