- 2 bunch asparagus, trimmed
- 4 eggs, poached
- 1/3 cup shaved parmesan
- truffle oil, to serve
- 4 toasted baguette, to serve

Blanch asparagus in boiling salted water for 2 minutes. Drain

Divide asparagus equally onto serving plates.

Poach eggs in gently simmering water for 2-3 minutes until cooked to taste.

Top asparagus with egg. Sprinkle with parmesan. Drizzle wtth truffle oil. Season to taste. Serve with toasted baguette.
