A real green salad

A real green salad
- 1 bunch asparagus
- 10 fresh beans
- 10 broccoli florets
- 10 snow peas
- 2 to 3 spring onions, thinly sliced
- 2 sticks celery, diced
- 1 avocado, sliced
- 1 cos or fancy green lettuce (not iceberg), torn into pieces
- marigold or nasturtium petals, to garnish (optional)
Green dressing
- 1 bunch parsley
- 3 tablespoon good olive oil
- juice of 1/2 lemon
- salt and pepper
- 1/2 teaspoon sugar
- 1/2 teaspoon mustard
- 3 tablespoon mayonnaise (or plain yoghurt)

Quickly blanch the asparagus, beans and broccoli in boiling salted water. Drain and cool. Combine with the remaining salad ingredients.

Make the dressing by combining all the ingredients, except the mayonnaise, in a food processor and blitzing until well blended.

Toss the greens with 2 tbsp dressing. Whisk the mayonnaise into the remaining dressing. Spoon this onto a large plate and spread evenly. Pile the greens on top and garnish with the flower petals.
notes
- Not all these ingredients will be in season, so use your imagination. Young silverbeet, rocket, young beetroot leaves, slices of pears or green apples will work, or you can cheat a little on the green theme by adding segments of orange to give it a lovely tang.
