Timothy van der Werff, a recent arrival in Auckland, missed the Netherlands’ fries so much he set up shop in a converted shipping container. He hand-cuts potatoes for his fries (skin on), serving them with Dutch mayonnaise, satay and tomato sauces, or a combination of all three – topped with raw onion – known as Patatje Oorlog.

Coreano is known for its Korean/Mexican-inspired loaded fries, which come topped with kimchi, salsa roja, pulled pork and sour cream. Find the food stall – which also serves mean Korean barbecue tacos – at markets year-round.
This Australian vegetarian fast-food chain has a cult following over the Tasman, and now Auckland has two branches (one of which is also located in a shipping container). Every item on the menu can be veganised, including chunky, classic, shoestring and sweet potato fries which come topped with a rainbow of dairy-free sauces and gravies.
