Zucchini and mint couscous salad

  • 1/2 cup couscous (or wholegrain couscous)
  • 1/2 cup boiling water
  • 2 zucchini
  • 1/2 cup fresh mint leaves
  • 1/4 cup crumbled reduced-fat feta
  • 1 tbsp olive oil
  • 2 tsp finely grated lemon rind
  • 2 tsp lemon juice

Steps

Zucchini and mint couscous salad

  1. Combine couscous and boiling water in a medium bowl; cover, stand for 5 minutes, fluff with a fork occasionally. Thickly slice zucchini; cook on a heated oiled grill plate (or grill or barbecue) for 2 minutes each side or until tender and browned.
  2. Combine zucchini, couscous, fresh mint leaves, crumbled feta, olive oil and lemon rind and lemon juice.
