Warm lamb salad

  • 400 g lamb backstrap
  • 1/2 tsp dried oregano
  • 1 zucchini, sliced on the diagonal
  • 2 tsp olive oil
  • 1 1/2 cups (180g) frozen peas
  • 1 1/2 cups (300g) couscous
  • 1/3 cup shredded mint leaves


Warm lamb salad

  1. Preheat a lightly greased char-grill on high. Season lamb and sprinkle with oregano. Cook Lamb for 3 minutes each side, adding zucchini slices halfway through. Rest lamb for 4 minutes, slice.
  2. Meanwhile, combine oil and 1 1/2 cups water in a saucepan. Bring to boil. Add peas and boil for 1 minute. Remove from heat, stir in couscous and season to taste. Cover and set aside.
  3. Fluff couscous with a fork and toss with mint, zucchini and lamb slices. Season to taste and serve.
