Tuna pasta with lemon crumbs
Ingredients
Tuna pasta with lemon crumbs
- 400 g spaghetti
- 425 g can tuna
- 1/2 long baguette, torn
- 2 cloves garlic, crushed
- 1/2 cup parsley, chopped
- 1 lemon, finely grated zest and juice
- lemon wedges, to serve
- garlic bread, to serve
Steps
Tuna pasta with lemon crumbs
- Cook spaghetti, following packet instructions. Drain. Keep warm. Drain can of tuna, reserving oil.
- Place baguette into a food processor. Process until crumbs form. Heat half tuna oil in a frying pan on medium. Add 1 1/2 cups breadcrumbs and garlic.
- Cook, stirring, 3-5 minutes. Stir through parsley, lemon zest and juice.
- Toss flaked tuna and crumbs through hot pasta with juice and remaining oil. Top with basil leaves.
