Ingredients

Tea party tipple

  • 20 cm stalk fresh lemongrass, trimmed, cut in half lengthways
  • 2 earl grey tea bags
  • 1/3 cup caster sugar
  • 1 1/2 cups boiling water
  • 1 lemon, thinly sliced
  • 600 ml chilled dry ginger ale
  • 1/3 cup lemon juice
  • 1 cup gin

Steps

Tea party tipple

  1. Place lemongrass in a heatproof jug. Add tea bags, sugar and boiling water, stir until sugar dissolves. Stand 10 minutes.
  2. Discard tea bags. Cover and refrigerate until cold. To serve, fill one-third of a jug with ice; sliced lemon, tea mixture and lemongrass stalks. Stir in ginger ale, lemon juice and gin to combine.
