Method
1.Combine curry paste and seeds in a large frying pan. Heat on medium, stirring for 1 minute until fragrant.
2.Add mince and brown well for 2-3 minutes. breaking up with a spoon as it cooks. Add tomatoes and beans. Bring to boil and simmer for 2-3 minutes.
3.Meanwhile, make salad by arranging pappadums in single layer on a dinner plate. Microwave on high (100% power) for 40 seconds to 1 minute, until puffed and golden. In a medium bowl toss carrot, orange, mint and currants together. Crumble pappadums over when ready to serve.
4.Serve curry with salad and quick-cooking rice, cooked following packet instructions.
