Method
1.Heat the soup in a pot and add all the other ingredients, except the cheese and parsley.
2.Place in bowl and top with parmesan cheese and chopped parsley. Adjust with seasoning.
3.If you enjoy extra heat, add a little fresh chilli on top.
You don’t need to add salt – most of these commercial soups already have a good dose of it. If you don’t have parsley in the garden, use fresh mint. You could even add leftover roast meat or drained canned tuna and serve it on a bed of rice as an amazing last-minute dinner option. Adding a packet of microwave rice could also help bulk up this meal.
