Method

1.Rinse rice in cold water until water runs clear; drain. Place rice and 3 cups water in a large heavy-based saucepan over high heat. Cover; bring to the boil.
2.Reduce heat to low; cook for 30-35 minutes or until water is absorbed. Remove from heat. Stand rice, covered, until cooled completely. Add honey and avocado; stir to combine.
3.For each nori roll, place a nori sheet on a flat surface. Spread a quarter of the rice mixture over sheet, leaving a 2cm border. Top with a quarter of the cucumber and 2 pieces of the beef.
4.Roll nori tightly to enclose filling. Place seam-side down on a board. Trim ends of rolls. Cut each roll crosswise into 5 equal portions. Serve with soy sauce.
