Ingredients

Method

1.Preheat oven to moderate, 180°C.
2.Spread both sides of bread with butter. Cut in half. Arrange in a 6-cup baking dish alternately with banana slices, slightly overlapping the pieces. Sprinkle with berries.
3.In a large bowl, combine half condensed milk, all the milk and eggs and whisk well. Pour over bread and set aside 10 minutes. Sprinkle with cinnamon sugar.
4.Bake pudding 45-50 minutes, until top is golden and custard mixture just set.
5.Meanwhile, to make caramel sauce, place remaining condensed milk in a saucepan. Stir over a medium heat 5-6 minutes, until thick and golden. Mix in cream, stirring until smooth. Bring to the boil.
6.Cool pudding 5-10 minutes. Serve with ice-cream and caramel sauce.

Use fresh blueberries if preferred, but if you are using frozen blueberries, be sure to add them while still frozen.
