Ingredients

  • 250 g butter, softened
  • 3/4 cup caster sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 3/4 cups plain flour
  • 100 g boiled lollies
  • fine ribbon or colourful string to tie

Steps

  1. In a large bowl, beat the butter and sugar with an electric mixer until pale and creamy. Add egg and vanilla, beating until well mixed. Reduce speed to low and gradually beat in flour, mixing just until a ball of dough forms. Wrap dough in cling film and chill for 30 minutes.
  2. Using a rolling pin, crush boiled lollies in a plastic bag, keeping different colours separate. Preheat oven to 180°C.
  3. Roll the dough out on a lightly floured work surface to a thickness of ½cm.
  4. Using cookie shapes, cut out shapes of dough, then cut out smaller shapes from the centre of each. Carefully place biscuits onto a tray lined with baking paper.
  5. Fill the centres with crushed lollies. Using the tip of a drinking straw or skewer, carefully make a hole in the top of each cookie (to thread the ties).
  6. Bake for 10 minutes or until pale golden brown and the lollies have melted. Remove to cool on the tray until firm.
  7. Thread lengths of fine ribbon or string through the holes to tie, then hang the cookies on to your Christmas tree.
