Spring salad

A sun-kissed salad by Sarah Bowman

Ingredients

Spring salad

  • 1 bag watercress, rinsed, stems removed, roughly torn
  • 2 witlof, rinsed, leaves separated
  • 6 mandarins, peeled, sliced into rounds
  • 1/2 cup roasted hazelnuts

Dressing

  • 3 tbsp olive oil
  • 2 tbsp mandarin juice
  • 1 tbsp grainy mustard
  • 1/2 tsp sugar

Steps

Spring salad

  1. Toss the salad ingredients together.
  2. Shake dressing ingredients together in a small jar and pour over the salad.
