Spicy Chicken Salad

Ingredients

Spicy chicken salad

  • 800 g chicken tenderloins
  • 2 tbsp cajun seasoning
  • 2 tbsp oil
  • 100 g baby spinach, washed, coarsely shredded
  • 80 g snowpea sprouts
  • 4 stalks celery, cut into thin strips
  • 1 red capsicum, seeded, finely sliced
  • 1 green capsicum, seeded, finely sliced
  • 1/4 red cabbage, finely shredded
  • 1 tbsp sesame seeds, toasted, to serve

Garlic dressing

  • 1/2 cup (110g) caster sugar
  • 6 garlic cloves, peeled and coarsely chopped
  • 1/2 cup (125 ml) balsamic vinegar
  • 1/2 cup (125ml) olive oil

Steps

Spicy chicken salad

  1. Dust chicken with Cajun seasoning. Heat oil in a large frying pan on high. Cook chicken in batches for 3-5 minutes each side, until golden and cooked through. Cool and tear into large shreds.
  2. Combine salad ingredients in a bowl. Add chicken and Garlic dressing and toss gently. Serve topped with sesame seeds.

Garlic dressing

  1. Combine sugar and 1 tablespoon water in a saucepan. Stir on low heat until sugar dissolves. Increase heat and boil for 7 minutes, without stirring, until caramelised.
  2. Remove from heat and carefully stir in balsamic vinegar. Strain into a bowl.
  3. Gradually whisk in oil, 1 teaspoon at a time, until mixture thickness slightly.
