Ingredients

Spaghetti with creamy coriander sauce

  • 500 g spaghetti
  • 300 g silken firm tofu, drained
  • 1 bunch coriander, roots scrubbed and trimmed (see tip)
  • 1/2 cup (40g) grated parmesan
  • 1 clove garlic, crushed
  • 1 tbsp olive oil
  • 1 punnet grape tomatoes, quartered

Steps

Spaghetti with creamy coriander sauce

  1. Cook spaghetti in a large pan boiling, salted water according directions. Drain and return to pan.
  2. Meanwhile, place tofu, coriander, parmesan, garlic and oil in a food processor and process until smooth. Season to taste.
  3. Add two-thirds of coriander sauce and tomatoes to spaghetti and toss well on low heat until warmed through. Serve spaghetti with dollops of remaining sauce.
