Smoked Salmon Rice

Ingredients

Smoked salmon rice

  • 2 tbsp olive oil
  • 2 eggs, lightly beaten
  • 4 green onions (shallots), sliced
  • 3 cups cooked brown rice
  • 400 g can brown lentils, drained and rinsed
  • 150 g smoked salmon, finely sliced
  • 1/4 cup finely chopped dill

Steps

Smoked salmon rice

  1. Heat half of olive oil in a large frying pan on medium. Add eggs, swirling to coat base. Cook for 2-3 minutes, until firm. Remove from pan, roll up, slice and set aside.
  2. Wipe out pan with paper towel. Return to heat with remaining olive oil. Cook green onions for 1 minute. Add brown rice and lentils, and cook, tossing frequently, for 3-5 minutes, until heated through. Remove from heat, stir through smoked salmon, dill and sliced egg, and season to taste. Serve.
