Smoked chicken salad

  • 1/4 cup (35g) hazelnuts
  • 400 g green beans, trimmed
  • 300 g smoked chicken breast fillet, sliced
  • 400 g can chickpeas, drained, rinsed
  • 250 g cherry tomatoes, halved
  • 2 tbsp white balsamic dressing
  • 1 tbsp extra virgin olive oil


Smoked chicken salad

  1. Preheat oven to 220°C / 200°C fan-forced. Place hazelnuts on a baking tray and cook 5 minutes. Rub vigorously in a clean tea towel to remove skins and set aside.
  2. In a saucepan of boiling, salted water, cook beans 3 minutes, until tender but still crisp. Drain and cool in iced water. Drain again.
  3. Combine beans, chicken, chickpeas and tomatoes in a large bowl. In another bowl, combine white balsamic dressing with oil and season to taste. Pour dressing over salad and toss to coat. Serve scattered with hazelnuts.
