Simple smoked salmon fettucine

This smoked salmon fettucine is a quick, easy and budget-friendly family meal that needs just 5 ingredients to take it from stove to dinner table
Ingredients
- 500 g fettuccine
- 3 zucchini, thinly sliced
- 4 cloves garlic, crushed
- 2 long red chillies, seeded, finely chopped
- 185 g hot-smoked salmon, flaked
Steps
- In a large saucepan of boiling salted water, cook fettuccine following packet instructions. Drain, reserving ¼ cup cooking liquid. Return pasta to pan.
- In a large frying pan, heat a little olive oil on medium. Sauté zucchini, garlic and chilli for 2-3 minutes until tender.
- Return to saucepan over medium heat. Add zucchini mixture and reserved pasta water. Cook for 1-2 minutes until liquid has evaporated and mixture is well combined.
- Gently fold salmon through. Season to taste. Serve with grated fresh parmesan, if desired.
