Strawberry almond and quinoa bars with lemon

Forget sugar-laden shop-bought muesli bars. These rich but healthy fruit and nut-filled treats make a tasty energising snack or on-the-go breakfast.

Method

1.Preheat oven to 160°C and line a slice tray with baking paper.
2.In a large mixing bowl, add the quinoa flakes, ground almonds and strawberries.
3.In a separate bowl, whisk together the melted butter, honey, eggs and zest, and add to the dry ingredients. Mix until well combined, transfer the mixture into the lined tray, and press down evenly.
4.Bake in the oven for 20-25 minutes or until golden on top.
