Ingredients

Method

1.Preheat oven to 200°C. Lightly grease 2 baking trays.
2.Place 1 sheet of filo pastry on bench. Spray with oil. Repeat with remaining filo (stacking on top), finishing with oil. Cut into 4 even squares.
3.Arrange 2 filo squares on each tray. Top each with ¼ of the peaches, leaving a 3cm border. Sprinkle with cinnamon.
4.Pleat pastry edge around filling to make a border – keep top open. Spray pastry edges with oil. Sprinkle all over with sugar. Scatter evenly with flaked almonds.
5.Bake for 15-20 minutes until pastry is crisp and golden. Serve warm with low-fat ice-cream.
