Method

1.In a salad bowl, combine duck, cucumber, orange, pomegranate seeds, onion and coriander.
2.To make dressing, whisk all ingredients together in a small jug. Season to taste.
3.Drizzle salad with half dressing and gently toss to combine.
4.Divide lettuce leaves among four serving dishes. Top with salad, sprinkle with noodles and drizzle with remaining dressing.

You can replace the duck with 2 cooked peking duck breasts or a barbecued chicken.
