Method

1.Place potato in a medium saucepan and cover with cold water. Bring to a boil on high and cook for 8-10 minutes, until tender. Add peas 30 seconds before end of cooking time. Drain vegetables well.
2.Meanwhile, in a large frying pan, heat oil on medium. Saute onion for 3-4 minutes, until tender. Brown mince for 5-6 minutes, breaking up lumps as it cooks. Stir in curry paste and cook for 1-2 minutes, until fragrant.
3.Preheat oven to hot, 200°C. Line two oven trays with baking paper.
4.Add potatoes and peas to beef mixture. Mix well and season to taste. Cool slightly.
5.Spoon 1/4 potato mixture over one side of a pastry sheet. Fold in half to cover filling. Trim open sides to make a semicircle, then press edges together to seal. Transfer to a tray. Repeat with remaining ingredients.
6.Bake for 15-20 minutes, until puffed and golden. Serve with chutney and salad.
